Tips for parents of finicky eaters

My toddler is such a finicky eater and basically refuses to eat veggies. Knowing that his favorite foods include pizza and macaroni and cheese, I've come up with several different ways to "spruce up" his meals.  Recently I bought some pizza dough (most grocery stores carry fresh dough, or you can buy frozen, pillsbury, or make your own!), rolled it out and put pureed cooked carrots on top of the dough and then I added tomato sauce, cheese and turkey pepperoni.  I realized that I could use basically any pureed veggie and my son would not know the difference!  If pureeing isn't an option, you could also use baby food.

Another thing that I've done is to chop up cooked summer squash into really small pieces and add it to macaroni and cheese.  I usually add extra cheese and a bit of milk and the cheese completely camouflages the squash.  I think it actually makes the meal even tastier!

I'll have to try that with my 17 month old. He is quite the conossieur, so I hope he doesn't figure it out!

My son isn't a picky eater, but he really likes to eat pureed winter squash with macaroni mixed in.
