Sometimes the obvious thing is the answer. I was trying to make microwaved "baked" apples in a hurry, and I couldn't get them cored perfectly, so I just cut each apple into four wedges, left the skin on, put them into a buttered microwave safe bowl, drizzled brown sugar, cinnamon and dots of butter on top, and microwaved for about 10 minutes. I checked, added a couple of minutes, and voila, they were perfect, yummy, and the kids felt like they were getting more than their fair share because they each got four big pieces.
I actually served them as a side dish with pork chops, but if you add whipped cream or ice cream, they would be a perfect dessert.
