Quick, easy, and delish! Here's dinner in twenty minutes:
What you need:
1 T butter 1 T flour
1 package popcorn shrimp 1/2 clove of garlic, crushed
1 7 oz can of salsa verde 1 16 oz can fruit cocktail
1 t ginger 1 c milk
salt, pepper, chile powder, cumin splash of orange juice
tortillas and cheese for quesadillas
What you do:
Get frozen popcorn shrimp started in the oven according to package directions. Melt butter in medium skillet, saute garlic, and add flour. Let the flour brown just a little bit and then pour in salsa verde. Keep heat at medium. Drain juice from fruit cocktail into skillet and set aside the fruit for a side dish. Add milk, ginger, and a splash of orange juice. Season with salt and pepper and other spices to taste. Turn up heat to medium high and let sauce simmer and thicken. I kind of play with the liquid amounts until I am pleased with the consistency and flavor, orange juice will thin and sweeten the sauce, milk with temper the heat a little. While sauce is thickening, melt cheese between warm tortillas to make quesadillas. Serves four.
