This recipe is very easy and can be changed to suit your needs or occasion. I'll put it in the way I made it but feel free to change it around. Prepare one package of vanilla pudding according to directions. Add 1 teaspoon mint flavoring and a few drops of green food coloring. Stir to blend and add food coloring if you want a darker green. When it thickens a little pour it in a graham cracker crust or regular pie crust. Chill until it's set. Make another package of vanilla pudding and a dd red food coloring until you get the shade you want. Chill until set and then spoon on the mint layer. Chill until ready to serve. Top with cool whip and you've got a great easy desert. You could top the mint layer with chocolate pudding or tint the vanilla layer in different colors. Use differnt extracts for different occasions.
