I'm not quite organized enough to do Once a Month Cooking (OAMC), but I love the concept of having some meals in the freezer ready to go. I love the meals from the meal assembly chains like Dream Dinners, Let's Dish, Easy Dinners and Chef Dane's, but I have trouble getting myself to a meal prep session. Then a friend told me about some of the new freezer cooking cookbooks out there with recipes similar to the popular meal assembly chains. We're not talking about condensed soup and ground beef here - most have fresh veggies and great sauces. And many of them let you make one, three or 6 meals so you can pick how much you want (based on the space in your freezer!). Save time and enjoy!
