I just came up with a delicious, low fat, vegetarian recipe. I wanted to make rice and beans to go with my enchiladas, but the kids have a tantrum if I put anything in their beloved plain rice. So, I switched the rice for orzo, and that didn't upset them as much. I just threw together cooked and drained orzo, a drained can of black beans, a small can of sweet corn, olive oil, cilantro, and seasoned salt, and warmed it up a little in the orzo pot. It worked!
