This is an un-recipe because it's too simple to be called a recipe. Buy a box of Goya Yellow Rice (see website) and a pound of chicken. Follow the directions on the box, which are basically brown the chicken in oil, add water and rice mix, and simmer 20 minutes. Serve with a green vegetable of your choice. If the kids aren't home, serve with sangria! Hint: I use boneless thighs, and the dark meat adds a nice flavor, and costs a lot less than breasts. You can use chicken on the bone, if you want, but in my house the kids don't like the bones. Muy delicioso!
