I tried to invent a lazy man's chicken parmagian, but it ended up more like a poultry version of spaghetti and meatballs. Anyway, this was a delicious meal: Cut a pound and a half of boneless, skinless chicken breast into 2-inch cubes, season as desired and saute until cooked through and browned on the outside. I use soul seasoning, and I also threw on some of a spice mix that is supposed to be mixed with oil for dipping bread. Then, cook a pound of pasta in a hearty shape. Mix cooked chicken, cooked pasta, a jar of pasta sauce that has a cheesy flavor, a big handful of shredded mozarella, and a couple of heaping tablespoons of sour cream. The cheese and sour cream make a creamy, pinkish sauce that is delicious. Since there's more chicken than pasta, you can pretend it's healthy, especially if you serve with a nice big salad.
