Quick Pie Crust

Here is a quick pie crust recipe using flour paste.

After sifting two cups flour with one tsp salt, take 1/3 cup of the flour and mix with 1/4 cup cold water until a paste is formed.  Set aside.  To the remaining flour cut in 2/3 cup of veg shortening to the size of small peas.  Add paste and mix until it forms a ball.  It is now ready for rolling or you may chill until needed.  Try to keep all ingredients and utensils cool while using as it helps in the blending.

Once rolled and in pie pan, before filling (with pumpkin custard maybe) prick the entire crust with a fork.  The crust will bake more evenly.

I have also used this crust for meat pies.

We love this recipe! It worked great for a chicken pot pie and a fruit pie. My older daughter is teaching a cooking class for the friends of her 12 year old sister and is using this recipe for the pie crust. Thanks for the tip=)
