An easy and delicious chicken recipe for crockpot or slow cooker. Ingredients:
- 6 boneless chicken breast halves, skin removed
- 6 slices Swiss cheese (I recommend Finlandia or deli-sliced, not packaged).
- 1 can cream of mushroom soup
- 1 can regular lowfat milk (mix with soup from can....I always add a little more)
- 2 cups stuffing mix (I use a regular bag of Bell's stuffing - red box)
- 1/2 cup butter melted (a couple of pats will do)
Preparation: Wash chicken pieces and pat dry. Lightly grease slow cooker or spray with cooking spray. Place chicken breasts in pot. Top with the Swiss cheese. Spoon soup/milk mixture over cheese. then sprinkle with stuffing mix. Drizzle melted butter over stuffing mix. Cook on low for 6 to 7 hours or medium/high 3 1/2 - 4 hours. Check every so often to make sure it stays moist. You can add more milk toward the end if you think it needs it. Serves 6.
