Good Morning America recently had 5 healthy ways to spice up kids' lunch boxes.  I made the corn muffins for my 3-year-old and he loves them.  They have bits of broccoli, corn, ham, and cheese.  The great thing about those is you can make a batch and freeze them, making morning lunch-making a breeze.  I also tried a version of the turkey roll-ups.

Note: The first recipe is made with peanut butter. My son's preschool doesn't allow peanut-butter, for good reason, so I just skipped over that one.

Not all schools have the peanut butter restriction. My daughter's doesn't and we send her with pb and banana all the time.

Please NO peanut butter recipes to send to school. Much as we all love peanut butter it is not allowed in my four year old's classroom due to another child's allergy which is life threatening. It sounds like a great recipe to use at home and I will try it here but it will not go into his lunchbox for school.
