Then I found the book American Pie: My Search For The Perfect Pizza, by Peter Reinhart, a cooking instructor at Johnson and Wales. His recipe for ordinary pizza dough is amazing, and has never disappointed us. We often make pizzas for parties and everyone agrees that it is as good as any they have had on the outside. All you need is this book, a pizza stone, and a little patience, and you will be rewarded. We have one recommendation, which is that you use a heavy-duty mixer, like a Kitchen-Aid, to make the dough. You can make it by hand, and the author assumes that you will make it by hand, but your work will be very much reduced with a stand mixer.
Some users have asked me to post the pizza dough recipe; unfortunately, I can't do this without breaking copyright laws, since the recipe is published in a book. I would have to have permission from the publisher to post it. If you are really interested in the recipes, I would encourage you to read the book to learn his technique, which is as important as the recipe itself.
