Too hot to turn on the oven and too tired to cook? Here's a quick, easy dinner. Get some prepackaged chicken strips, such as Perdue Short Cuts (there are several different brands, ask at the market), some cheddar or mexican-style shredded cheese, and some fajita sized tortillas (usually in the dairy section for some reason.) Heat up a skillet and spray with non-stick spray. Fill your tortilla with chicken and cheese and fold in half. It just takes a minute or two on each side to crisp up the tortilla and melt the cheese. You can add salsa, avocado, sour cream, black olives, corn, green onion if desired. Serve with minute rice (yes, it's really good!), but when you add the rice to the water, also add a big handful of shredded cheese and a heaping tablespoon or two of salsa. Serve with a nice, cool salad, and dinner is complete and kid-friendly in about 15 minutes. If you have tortilla chips on hand, use them instead of croutons.
