Delicious Peanut Butter Cup Cookies

This is a quick and delicious cookie recipe given to me by my mom.  Makes about 2 dozen cookies.  Kids will enjoy helping out and putting the Reese's Cups into these cookies.

PEANUT BUTTER CUP COOKIES

½ Cup Butter

½ Cup Peanut Butter (I prefer Jif Creamy)

½ Cup Sugar

½ Cup Brown Sugar

1 Egg

½ Teaspoon Vanilla

1 ¼ Cups Flour

¾ Teaspoon Baking Soda

1 Bag Reese’s Miniature Peanut Butter Cups

Cream butters and sugars, then beat in egg and vanilla.  Blend in dry ingredients.  Shape into balls and put into ungreased tins.  Bake 10-12 minutes at 375 degrees.  Remove from oven and immediately press Reese’s Peanut Butter Cup into each cookie.  Let cool slightly before removing from tin.

Great recipe! To make it even faster and easier I just use store-bought refrigerated peanut butter cookie dough (like Tollhouse or Pillsbury), or you can get the dry peanut butter cookie mix too :).
