Here are 3 fabulous tips from my money saving ezine: At a reception, people should place whatever is least expensive (maybe a veggie tray, definitely not meats or cheeses) at the end of the table nearest the door, where the line begins, etc. People always take more of the first items they reach because their plate is less full and their eyes tell them there's room for it.
People find a table more satisfying (even if the items on it are cheap and simple like chips and salsa and plain cookies) if the trays are not all the same shape and size, and if the contents are staggered between sweet and savory. Just something as simple as varying round and oblong trays and
bowls, or even a basket for things like breads, makes the table more interesting and appetizing to look at.
Make a second set of trays and keep them in the kitchen. When a tray reaches half empty, switch it out completely and replenish the first tray in the kitchen. A full table (even if it's full of inexpensive items) is very rich looking. And it's much neater and prettier than having someone with a yucky baking dish trying to refill a tray while people are waiting in line.
