I loved these meatballs When I was a child, and I used to beg my mom to make them. I hope you enjoy them as much as I did and still do!! "Let me know" **These are very kid friendly"!!
With just a few ingredients to put together, this is a great recipe to make when you have very little time to prepare for dinner!! This is the kind of meal that is great to make when you are going to be out for the afternoon!!
Porcupine Meatballs
(Makes 5 servings) **I always double this for my family of 5.
3/4 lb. extra-lean ground beef or ground turkey
1 cup skim milk
1/2 cup uncooked long grain rice
1 medium-sized onion, chopped
1 cup dry bread crumbs
1/2 tsp. salt
dash of black pepper
10 3/4-oz. can low- fat, low sodium cream of mushroom soup
1/2 cup skim milk
Combine meat, 1 cup skim milk, rice, onion, bread crumbs, salt, and pepper in a bowl.
Shape with an ice cream scoop. Place in slow cooker.
Cover. Cook on low 6 hours
Mix together soup and 1/2 cup milk. Pour over meatballs.
*Serve with mushroom-soup gravy, or any gravy of your choice
