Since my bananas were starting to turn and I know the ripened ones always made the best bread, I decided to see how they would fair in muffins. This recipes takes very little time and they turned out moist and delicious. These are so simple to make, your kids could probably jump right in and help.
1/2 c butter at room temperature
1 c brown sugar
2 eggs
1 tsp vanilla
1/4 c sour cream
3 large ripe bananas, mashed
1 1/2 c flour
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp baking powder
Cream together the butter and sugar. Add the eggs, sour cream, bananas and vanilla. Mix all the dry ingredients together, then blend them into the mixture, Spoon into greased cupcake pans and bake at 350 degrees for 15 - 20 minutes or until golden brown.
I think I'll add some walnuts to my next batch.
