I wanted to whip something up for lunch that I could put into a flour tortilla, and came up with this, which was delicious: chop up half of a sweet onion and mince two garlic cloves, and fry with a small amount of olive oil. When the onions are soft, put in a chopped jalapeno pepper, seeds removed, and fry that for a minute or two more. Next, put a can of pinto beans into the pan, mash with a potato masher, and cook them for a few minutes. There will be some extra liquid from the beans, but keep stirring and it will evaporate. Serve the beans plain, or put into a flour tortilla with some salsa.
