You may have seen Silpat mats on cooking shows or in the baking section of a kitchen store, but if you’ve never given them a try, you should. They are silicone mats that sit at the bottom of your baking sheet and they eliminate the need for greasing because nothing will stick to it. I use them for cookies and biscuits, and they are great at this time of year when I make batches of cookies because it eliminates one more step when I’m putting in multiple trays. Plus the cookies do not brown at all on the bottom. Mine have lasted for years.
