 When my husband's away, and I want to make something for dinner that the kids will actually eat, I make "cupcakes" for dinner. Just take any Pillsbury refrigerated cannister such as dinner rolls, french bread, crescent rolls, pizza dough, etc. and unroll the dough. Separate into squares or triangles, and line each cup of a sprayed muffin tin with the dough. Then, fill the center with almost anything in the kitchen that you want the kids to eat. I have used: meatballs with or without cheese and sauce; pepperoni and cheese; chicken cubes or nuggets; chopped veggies; cheese, salsa and corn; hot dogs with and without American cheese; etc. Decide if you want to fold the dough over the top, or leave it as an open cup. I usually fold it over, to make the middle more of a surprise. Then bake for the usual time it says on the package. They pop right out and look irresistable. Of course, serve with healthy side dishes for a complete dinner. Comments
